How to Make Smores Quesadillas

We've made it no secret that we love Smore's around here. We've made Cookies, Croissants, Unique Bites, a Giant Smore Cake, and even a round-up of 12 Unique Smore Recipes. Today, we're doing yet another recipe, Smore Quesadillas! The girls LOVED these and they are ridiculously easy to make. You only need three ingredients! Mini marshmallows Milk chocolate chocolate chips Tortillas 1) Put one tortilla in a heated frying pan 2) Sprinkle with chocolate chips and marshmallows 3) Top with another tortilla 4) When the chocolate chips begin to melt, flip the whole thing over 5) Let it melt a little more and then remove from the heat 6) Cut into 4 sections (a pizza cutter works great for this!) 7) Serve immediately (Excuse the horrible photo above, I tried to snap a photo of the girls eating these put my camera battery died so I had to use my cell phone) If done correctly, these smores quesadillas are just as messy, if not messier, than the … [Read more...]

Smore’s Cake

Last week I wrote a post about Nutty's camping birthday party.  In that post I told you that her giant smore's cake needed a post of it's own.  Now you'll know why... As I said in my previous post, this cake took me two days to make, was a little hard, and wasn't very practical but it looked awesome and the girls loved it.  The real instructions on how to make this giant smore's cake can be found on Not Just A Housewife.  I won't steel her post.  I will, however, tell you how making my cake went... Unlike the original cake, I started out making two vanilla cakes. I surprised myself on how well they turned out (i.e. I got them out of the pan without ruining them). I also surprised myself on how I was able to level them (no photo, sorry).  Between my cake layers I put marshmallow fluff creme. Unique Smore’s Bites

Smore's treats are all the rage on Pinterest.  People seem to love Smore's!  In fact, this isn't the first Smore's treat our blog has made.  Remember our Gimme Smore Cookies and Smore's Croissants?  Well, this is yet another version of this tasty American treat. These came as an idea to me when I was craving a Smore's type treat but didn't have the "proper" ingredients.  Ok, so I had chocolate and marshmallows but no grahm crackers.  Plus my marshmallows were mini and my chocolate was chips, not exactly right for making Smore's...I looked through my cupboards and found Vanilla Wafer Cookies--perfect! S’mores Croissants

My girls LOVE to eat s'mores but don't always like the mess of the sticky marshmallows.  Plus, we live in Minnesota and campfires are not an option in the winter.  Here's our version of s'mores that's a little less messy and super easy to make when campfires are not available. You'll need: Chocolate Chips Mini Marshmallows A Tube of Croissants/Crescent Rolls Optional stuff such as peanut butter, caramel, bananas, raspberries, strawberries... Step 1)  Separate the croissants and lay them out flat on a baking sheet. Step 2)  Put chocolate chips and mini marshmallows on the fat side of the croissant.  Add any optional ingredients.  Try not to overfill it.  For these photos we used chocolate/peanut butter chips and mini marshmallows only.  I have made these in the past with the optional ingredients and they are super yummy (especially the ones with the caramel and peanut butter!). Gimme Smore’s cookies

Who doesn't love a good old fashioned S'more? I know we do! In fact, they are a favorite at our house. And chocolate chip cookies? You'd have to be crazy not to love those. So why not mix the two together in an awesome, ooey, gooey S'more cookie? Here's what you need 1 1/2 cups flour 1 cup graham cracker crumbs (personally I like them with a few pieces in small chunks) 1 teaspoon baking soda 1 teaspoon salt 1 dash of cinnamon (in case you don't know what a dash is Websters Dictionary defines it as 1/8 of a teaspoon) 1 cup (2 sticks) butter, softened NOT melted 3/4 cup sugar 3/4 cup brown sugar, packed 1 teaspoon vanilla extract 2 eggs 2 cups miniature chocolate chips (please note, you must use chocolate chips NOT chopped up chocolate bars) 1 1/2 cups mini marshmallows 2 chocolate bars, chopped Mix all but the mini mallows and the chocolate bar chunks in a bowl and drop a tablespoon amount on a cookie tray.
