Have you heard of magic leprechaun pudding before? It’s a great thing for younger kids to eat to celebrate St. Patrick’s Day. My girls and I decided to take it one step further and make magic leprechaun pudding pie!
This pie was a HUGE hit for the girls to make and it didn’t last long in our fridge! It’s super simple to make and I hope it’s a huge hit for your family too!
To make your own magic leprechaun pudding pie you’ll need:
- Pistachio pudding
- Cool whip
- Pie Crust
- Pistachio nuts (optional)
Step 1) This step is completely optional but it does add more to the pie. I’m pretty sure that you can buy already chopped and shelled pistachios but we didn’t have those on hand. In our case, we had to shell and crush our pistachio nuts. I think for every one pistachio that went into our Ziploc bags to crush, the girls ate two! We used a meat tenderizing hammer to crush our nuts and obviously the girls thought this was “totally fun!”
Step 2) Again, this step is optional. Put the majority of your pistachio nuts on the bottom of your pie crust. Set some aside for later.
Step 3) The magic part! Mix the pudding according to the directions on the package. Ok, so what’s so magic about this part? Well, the pudding powder is white (at least the Jell-O brand is). When you mix it with milk, however, it turns green! Most younger kid think that it’s leprechaun magic that turns it green. Plus, it thickens as you stir it which is even more magic!
Step 4) Once the pudding is mixed, pour it on top of the nuts in your pie crust.
Step 5) Put your pie in the fridge to thicken and set for a few hours.
Step 6) Prior to serving, top with Cool Whip and remaining pistachio nuts.
